Ingredients:

  • 1 1/2 tsp salt
  • 3 1/2 cups all purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp baking soda
  • 1/3 cup water
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 2 1/2 cups sugar
  • 1 can (16 oz.) pumpkin

Directions:

  • In a large mixing bowl, mix all the dry ingredients
  • Make a well and add the wet ingredients
  • Mix on medium speed until smooth
  • Grease and flour 3 loaf pans or 4 to 5 smaller pans
  • Pour batter equally into pans
  • Bake at 350 degrees for 50 - 60 minutes
  • Cool slightly in pans, remove and allow to cool to room temperature
  • Wrap in plastic bags or foil (can be frozen and will keep in refrigerator for 3-4 weeks

Note: Chopped nuts and raisins can be added to taste (generally 1 cup of both)
