- 1 1/2 tsp salt
- 3 1/2 cups all purpose flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tsp baking soda
- 1/3 cup water
- 1 cup vegetable oil
- 4 eggs, beaten
- 2 1/2 cups sugar
- 1 can (16 oz.) pumpkin
Directions:
- In a large mixing bowl, mix all
the dry ingredients
- Make a well and add the wet ingredients
- Mix on medium speed until smooth
- Grease and flour 3 loaf pans or
4 to 5 smaller pans
- Pour batter equally into pans
- Bake at 350 degrees for 50 - 60
minutes
- Cool slightly in pans, remove
and allow to cool to room temperature
- Wrap in plastic bags or foil (can
be frozen and will keep in refrigerator for 3-4 weeks
Note: Chopped nuts and
raisins can be added to taste (generally 1 cup of both)
