Makes 12 1-cup servings

Ingredients:

  • 2 lbs. lean ground beef (4% fat)
  • 1 medium yellow onion, chopped
  • 2 oz. pack Ranch dressing mix
  • 2 packs Taco seasoning mix (McCormick, Old El Paso, etc.)
  • 1 can (16 oz.) red kidney beans
  • 1 can (16 oz.) pinto beans
  • 1 can (16 oz.) black beans
  • 1 can (16 oz.) white corn
  • 1 can (16 oz.) yellow corn
  • 1 can (16 oz.) Rotel tomatoes (diced)
  • 1 can (16 oz.) stewed tomatoes (chopped & Mexican flavored, if possible)
  • 2 cups water
  • Fritos corn chips
  • Sour cream
  • Shredded cheddar cheese

Directions:

  • Brown ground beef and onions in dutch oven or very large pot; drain if necessary
  • Add all other ingredients to the pot (don't drain any of the cans), stir and simmer for 2 hours
  • Serve 1-cup of soup in bowls over 1-cup Fritos corn chips. Top with sour cream and shredded cheese (to taste)
